Hi! Shannon from @happywifestyle here with an appetizer idea for you! Maybe you have a party coming up & you need an appetizer that is #Whole30 compliant, I happen to love this one… _______________________ BACON WRAPPED SWEET POTATO BITES: Heat your oven to 350 degrees F. Peel a large sweet potato/yam (the orange one not the white sweet potato). Chop it into bite sized pieces, drizzle with olive oil and sprinkle with cayenne. Cut the bacon in half so the pieces are shorter (you must use sugar-free bacon for this recipe for it to be compliant). Wrap the bacon around each piece & secure with a toothpick. Place them on an ungreased baking sheet so there’s room around each piece. I had extra potato pieces, so I scattered them on the pan too. Place them in the oven for 45 mins, flipping them as needed so they cook evenly. (It’s easy to flip them with the toothpick.) you may need a little longer than 45 mins, they’re done when the potatoes are soft & the bacon is crispy. Place them on a paper towel to drain so they’re not greasy when served. The potato remnants are delicious too…spicy & crisped from the bacon fat. This made about 22 pieces with one potato & one pack of bacon. _________________________ Enjoy! These would be great to share at a social gathering because you can eat a few!
